6 INGREDIENTS (PLUS SPICES) VEGAN BURGER

Ingredients (makes approx 6 burgers):

3 medium courgettes

1 generous tea spoon of miso paste

1 300 mls glass of oat flour (ground oats)

3 table spoons of tomato concentrate

1 small red onion

1 clove of garlic

table spoon of rapeseed oil

Spices:

1 tea spoon of turmeric

1 tea spoon of ground cumin

1/2 tea spoon of cayenne pepper

Preparation:

Grate the courgettes using the large grater holes, squeeze to remove extra moisture and set aside. Dice the onion and crush garlic, fry in rapeseed oil until golden. Add turmeric, cumin and cayenne pepper, stir well. Next add the courgette and stir fry for a few minutes stirring the mix every now and then. Once the courgette softens, stir in the miso paste, next add oats, keep stirring until the mix becomes quite sticky, add the tomato concentrate, mix well. Set aside to cool.

Line a baking tray with baking parchment and heat up the oven to 200C. Once the burger mix cools, using your hands form the burgers, the mix should stick together well.  Bake in 200C for 20 minutes each side. Enjoy!
