3 medium size carrots

1 1/2 tea spoon of baking powder

2 tea spoons of vanilla extract

6 – 8 table spoons of maple syrup

2 table spoons of coconut oil (melted)

1/2 glass of ground oats

4 table spoons of self rising flour

ground walnuts (for decoration)

approx 40g of unsweetened cocoa powder

1/3 glass of desiccated coconut

rice milk (approx 100mls, you may need more if the mix is too dry)


Grate the carrots (use big grater holes). In a large bowl mix together cocoa, flour, oats and baking powder, mix well. In a separate bowl mix coconut oil, vanilla extract and maple syrup. Combine dry and wet ingredients together, mix well, add rice milk and keep stirring until the mix is of right consistency (it should be quite sticky). Add the carrots & desiccated coconut and mix until all ingredients are well combined.

Line a baking tray with a parchment and spread the mix evenly. Dust the loaf with grated walnuts.

Bake in 180C for approx 30 mins. Allow to cool before serving.
